What is DAO?
The enzyme diamine oxidase (DAO) is found mainly in the intestinal mucosa, where it plays a crucial role in the digestion of food.
DAO Deficiency corresponds to a reduction in the functional activity of the main digestive enzyme responsible for removing histamine from food.
If histamine metabolism is disturbed and DAO activity is insufficient, there is an imbalance between the amount of histamine ingested and the ability to metabolise it.
